Lauki Kofta Curry

Lauki/ Bottel gourd/ Doodhi/ Ghiya/ Dudhi , easily available in most of the countries especially in the veggie section of asian aisle. It contains 96% water content, helps lower cholesterol, High in dietary fibre, Vitamin C, Iron etc.

Ingredients :-

For Kofta :-

Lauki - 1 full

Salt - 1 Tsp ( As Per Taste)

Turmeric Pwdr 1 Tsp

Red Chilly pwdr 1 Tsp (As Per Taste )

Garam Masala Pwdr 1 Tsp (As Per Taste )

Onion 1 Thinly Chopped ( small for Kofta)

Besan/Gram Flour 2-3 Tbsp (As Needed)

Ajwain / carraway Seeds - 1 Tsp

Asafoetida/ Hing 1 Tsp

Curry :-

Tomato - 3 large .

Cardamom 2

Cinnamon Stick 1 small

Bay Leaf 2

Onion 1 Medium size Chopped

Ginger/ Garlic/ Green Chilly paste ( As per taste )

Tomato Paste 1 Tsp

Water 1 Glass/ Cup (as required )

Corriander Leaves As needed.

Masala :-

Coriander pwdr 1 Tsp

Turmeric pwdr 1/2 Tsp

Garam Masala pwdr 1 Tbsp

Red Chilly Pwdr 1 Tsp

Oil for deep Frying the kofta .

Method :-

1) Peel the Outer Skin & remove the inner Seeds & white portion.

2) Grate the Lauki .

3) Squeeze tight the lauki between your both palms & squeeze out all the water in separate bowl ,which you can later use it while making curry or knead a dough.

4) In a separate bowl add in the grated lauki and then add the above mentioned masala ( Turmeric / Red chilly pwdr/ garam Masala pwdr/ Salt ), Onion thinly chopped, Ajwain & Asafoetida / Hing .And Add Besan/ gram Flour & make balls for Kofta. *** If you are unable to make the ball with your hand either add more besan or simply scoop with a spoon and add in the oil for deep frying.

5) Deep fry the Kofta until cooked ( do it on low flame) .

6) For tomato Puree :- Boil 3 tomatoes until you see a slit or a crack on the tomato, cool it down , peel the outer layer & puree in the grinder/ Mixer .

Or :- simply take 3 tomatoes & grind them in the mixer for tomato puree.

7) In the a kadia/ Deep pan, Add 2 Tbsp of oil, 2 Cardamom , 1 Small Cinnamon Stick, 2 Bay leaf, saute for 2 mins .

8) Add the Chopped Onion & saute for 10 mins, until you see the onion have turned light brown/ golden in color. Then add Ginger/ Garlic & green chilly paste/ pounded & saute again for 5 mins & add in the below mentioned paste & 1 Tsp of tomato paste (optional ) & Tomato puree and cook for 10 mins

9 ) In a small bowl, add together 1 Tsp Coriander pwdr / 1/2 Turmeric pwdr / 1/2 Tsp Garam Masala pwdr /1 Tbsp Red Chilly Pwdr 1 Tsp & add 2 tbsp of water & make a paste

10) Add 1 cup/ glass of water .

11) Now add the fried koftas, sprinkle some cilantro/ coriander & cook for 5 mins covered & its ready to be served !!!
