Bonda Recipe


Make Bonda and you will make your kids happy, provided you make it less spicy.

You can eat it like Vada Pav or like chat or as it is with garma garum chai .

Ingredients :-

Potato Boiled 4

Onion 1 Large

Asafoetida 1/2 Tsp

Turmeric Powder 1/2 Tsp

Green Chillies 2-3 Slit into Halfs

Ginger small pieces thinly chopped

Mustard Seeds 1 Tsp

Urad dal / Black lentil 1/2 Tsp

Salt 1 Tsp ( As pe taste )

Curry Leaves 6-7 Leaves

Oil 2 Tbsp ( Tempering )

Oil for deep frying

Maida / All Purpose Flour 1 cup

Baking Soda 1 Pinch

Method for making Bhaji/ Filling :-

1) Boil the Potatoes (do not over boil, whistle for 4-5 , all pressure cooker varies)

2 ) In a kadai / Wok, add 2 tbsp of oil when hot enough, add mustard seeds - let it crackle and then add urad dal, asafoetida, then chopped onion, green chillies, curry leaves & ginger and saute it for 5 -10 mins .

3) And then add turmeric powder.

4) Use a masher or your hands and mash the potatoes CHUNKY not very soft.

and mix in the tempering very well for 5 mins .

5 ) And put off the gas & let it cool down completely. And make equal balls with it, as shown in the picture.

Method for Outer Cover :-

1) In a bowl add 1 cup of Flour/ Maida + 1/2 Tsp of salt + enough water SLOWLY LITTLE BY LITTLE so it forms a dropping consistency batter & coats the bonda completely . Make sure you mix the batter very well and no lumps remain . you can also add baking soda -1 PINCH (Optional) .

2) Take Bonda and dip it in the batter & coat it very well.

3) Heat oil for deep frying & drop a small drop of batter to check if it is hot enough .

4) And fry the bonda 2-3 at a time.
