Egg Bhurji !


What to prepare for breakfast is the biggest worry of all time, and it gets real every single day. There are so many recipes made with Egg & one of such Indian way to make is " Egg Burji " ..Super yummy & fulfilling....forget about food until Lunch time.

Good to give as lunch for tiffin for kids as well.

Usually made with adding garam masala, but here i have added pav bhaji masala , to give it a very unique kind of taste. Im sure you will love it.

Ingredients :-

Egg 6 ( As per your need)

Coriander Leaves / Cilantro Chopped 1/2 Cup

Ginger & Garlic As per taste .

Oil 2 Tbsp or more

Onion 1 medium Size Chopped

Tomato 1 Big size

Green Chillies 3-4 slit into half ( as per taste )

Turmeric Powder 1/2 Tsp

Cumin Seeds 1/2 Tsp

Salt 1 tsp

Mustard Seeds 1/2 Tsp

Pav Bhaji Masala Powder (Or garam masala Pwdr) 1 Tsp

Method :-

1) Crack the eggs. Whisk & keep it ready.

2) Heat a kadai / Wok , add oil -when hot enough....add Mustard seeds (Let it crackle First ), then add cumin seeds( let it crackle as well) , then add Onion, green chillies, Ginger & garlic paste, salt and let it cook until onions become golden in color.

3) Then add Turmeric Powder, Chopped Tomato & little coriander leaves and pav bhaji masala & Cover and cook for 10 mins on low flame, until oil separates .

4) then add the Whisked egg - Combine everything well & cover & cook for 10 mins on low flame.

5) Cook uncovered for 2-5 mins ,breaking the burji into tiny pieces with the spatula .

Thats all about it !!! Your Egg Burji is ready

Have it in the breakfast with multigrain or whole wheat bread or roti /Chapatti .
