Quick Mango Pickle Kerala Style


Ingredients :-

Raw mango 1-2 ( can take as many wanted )

Fenugreek Seeds 1 Tsp

Mustard Seeds 1 Tsp

Oil 2 Tbsp

Garlic 2-3 Cloves chopped ( Optional )

Curry Leaves 5-6 Leaves

Salt 1 tsp

Turmeric Powder 1 Tsp

Red Chilli Powder 2 Tsp - 2 Tbsp ( as per taste )

**Vinegar -Optional - to store it longer ***

Method :-

1) Chop the Raw mango into very thin pieces.( there should not be any water nor on mango or knife or cutting board -pat everything dry)

2) In a Kadai, dry roast fenugreek and mustard seeds, until the fenugreek seeds changes into brown color and mustard seeds popping . Cool it down and grind into thin powder.

3) In the same kadai / Wok , add oil , once hot enough add Garlic and curry leaves and sauté for 2 mins .

4) Add Chopped Mango pieces , Turmeric powder, Red chilly Powder, salt ,the masala prepared & sauté for 5 mins on high flame.

5) You can also add Vinegar- 1 Tbsp if you want to keep it longer. ( I personally dont like the taste when added )

6) Cool it down atleast 5-6 hrs and store in the air tight container .
