Green Beans Thoran


We Mallus love to eat like a king though fat free, cooked in coconut oil with aroma that will even draw our neighbors... What's Cooking ??. Mallu food fans are across the globe...aint you ?? Growing up thought coconut oil might not be good for health & increases the risk of cholesterol etc ,whereas its just the opposite " COCONUT OIL" according to the recent studies is the best Oil ever found. Its even used in baking cakes to making healthy smoothies to 1 scoop of raw coconut oil on empty tummy to get rid of various diseases & enhances skin- hair for better....hmmmm... I guess I'm going little offtrack, where was I , ya Beans thoran .

Malayalees food plate includes...Choru- Rice , Kuttan -Curry, Papadum- Rice Crisp, Achar- pickle, Meen fry- fish fry, Tair- Yogurt & the star Thoran, everything is always in ample in our household.

There are many varieties of thoran / Poriyal / Stir Fry /Upperi ......been made, which is super light & healthy side dish, one such way is shared in the video with the details as below. Promise to share other thorans as well.

Ingredients :-

Green Beans thinly chopped 1 & 1/2 Cup

Salt 1/2 Tsp ( As per taste)

Coconut Oil /Any Oil 2 Tbsp

Turmeric Powder 1/2 Tsp

Curry Leaves Few

Grated Coconut 2 Tbsp

Onion Chopped Thinly 1 Small - Medium

Mustard Seeds 1 Tsp

Green Chillies 1 pounded ( as per taste)

Method :-

1) Thinly Chopped Beans ( ** Easy to cook if thinly chopped)

2) In a Wok /Kadai, 1 Tbsp of Coconut Oil.

3) Once hot add 1 Tsp of Mustard Seeds( Let it crackle ).

4) Then add Few Curry Leaves, chopped onion, Salt & Turmeric powder.

5) Saute the onions for for 5 mins .

6) Add the Beans ( if there is more than 1 cup, increase the ingredients 1/2 tsp more).

7) Cover & Cook on low flame for 10 mins .

8) Add pounded or crushed Green Chilly.

9) Cook for another 2-3 mins & then add shredded coconut around 1-2 Tbsp .

10 ) That's all ...enjoy with Hot pipping Rice, your fav curry & thoran to go with.

*** If you don't like to add Green Chillies, you can add Red chilly Powder or Black pepper powder or totally skip spice .
