Quinoa Salad

* Quinoa is naturally gluten free & contains iron, B - Vitamins, Magnesium, Phosphorus, Potassium, Calcium, Vitamin E & Fiber.

* Sunflower :- Vitamin E, Copper, Vit B etc .

Ingredients : -

Quinoa 1/2 Cup ( serves 1 - 2 person)

Water 1 & 1/2 cup ( To cook Quinoa)

Cucumber 1/2 Cup Chopped

Tomato 1/2 Cup Chopped

Avocado 1 ( You can add Boiled Beetroot instead)

Sunflower Seeds 2 Tbsp

Salt ( As per taste)

Pepper ( As per taste )

Coriander /Parsley 1/2 Cup

Lime Or Lemon 1/2 ( As per taste )

Method :-

Quinoa is cooked the same way as rice . 1 Cup quinoa = double the amount of water ...

1) Cover & Cook Quinoa on low adding 1/2 tsp of salt ( Optional) for 15 Mins.( Until all the water evaporates & you can see a white string popping out, thats when its ready.)

2) Ina large bowl Add all the ingredients ( Cooked Quinoa , Chopped Cucumber, Chopped Tomato, Avocado( Boiled Beet) ,Sunflower Seeds, Coriander )

3) Prepare Dressing :-

In a small bowl add lime juice, salt, pepper & Olive oil & stir well .

4) When ready to serve or eat , pour in the dressing & combine all together.

* If you don't find Avocado , you can replace it with Boiled Beet ( Beetroot chopped)

If you don't find Olive oil, you can replace it with coconut oil ( 1 Tbsp)
