Jhatpat Veg Pulao


I am in constant look for recipes which are easy and quick to make.....The left over rice is always my favorite ...& you know why ??!! ..i have few in my list already, simply because there are so many option to convert it into a recipe filled with goodness & play around by adding anything what we like to eat.

In this hurry-burry life, such easy recipes are like a blessing.

Let's start with the Ingredients :-

Left over rice/ Pre cooked / Cold - 1 - 2 cups

( make sure the rice is not over cooked)

Onion 1 Large ( Chopped into Long Slice)

Curry Leaves 5-6 ( as needed / Optional)

Potato 1 large ( as needed) chopped into cubes (as shown in the video)

Beans 1 Cup Or more ( Broken into long /equal pieces, as shown in the video )

Beet (Root) 1 Cup Or more ( Chopped

Oil ( Any ) 2 Tbsp

Carrot 2 Large carrot chopped into long pieces.

Green Peas 1/2 Cup

Cashew nuts 5-6 ( As needed)

Ginger /Garlic / Green Chillies paste ( as needed ) -

(1 small ginger/ 2-3 garlic & 1 green chillies )

Whole Garam Masala :-

Black Cardamom / बड़ी इलायची 1

Bay Leaf / तेज पत्ता 2

Cinnamon Stick /दालचीनी 1

Salt 1 Tsp ( As per taste)

Garam Masala Powder 1 Tsp

Rasin / किशमिश 2 Tbsp ( as needed )

Coriander 1/2 cup chopped

Method :-

1) In a deep pan / Wok , add 1 tbsp of coconut / Any oil , once hot enough. ..follow from 3rd step .

2) Meanwhile on other Pot boil together - Green Peas and Carrot ( Chopped into long pieces as shown in the photo ) for 15 -mins & then drain the water.

3) Add Cashew nuts - sauté until they turn light golden in color & take it out (remove) in a separate bowl.

4) On a low flame, add the whole dry Garam masala & potato cubes & let the potato turn into light golden in color & remove only the potato into a separate bowl.- approximately 5-10 mins

5) Now add the Onion & curry leaves & Ginger/ Garlic /Green Chillies paste & cook everything for 10 mins .

6)) Add Beet & Green Beans ( little large pieces) & cook until beet and beans turns soft and add SALT - cook for 10 mins .

7) Now add the boiled Carrot & peas ( without water ) & combine all well. - 5 mins .

8) Add Garam Masala powder -

**You can see how the beet color overpowers and brings a natural color to the whole dish, so did not add too much of other masala to this.

9) Add the Cold left over rice & COVER & COOK on medium flame for 10 mins .., it will be easy to mix without breaking the rice.

10) Add back - >>> Fried Potato , And cashew nuts .

11) Add Rasin / किशमिश / मनुका( You can add any color, have taken black. )

12 ) Add Coriander / Cilantro -

voila Jhatpat Veg Pulao ready ... I bet you will love the taste, look and aroma of it . Cook bhi khush, aur ghar waleh bhi ;)
