Baingan Bharta /Egg Plant Curry

Method :-

Eggplant 1 Big size

Oil 2 Tbsp

Cumin Seeds/ Jeera 1 Tsp

Red Chilli pwdr 1/2 tsp ( As per taste )

Cinnamon Stick 1

Green Cardamom 2

Turmeric Powder 1/2 Tsp

Coriander / Cilantro 1/2 a cup

Onion 1 chopped

Garlic 2-3 cloves

Ginger 1 small piece.

Tomato 1 Chopped

Garam Masala 1 Tsp

Salt 1 Tsp ( As per taste)

Ingredients :-

1) Fist Step , A) bake Eggplant @400 Degree for 30 mins & then broil for 10 mins.

This process will help to cook the Eggplant completely and will help us to remove the outer layer of the egg plant without any hassle (Disclaimer - " Kindly make sure it is cool down completely before you start the peeling process)

Or :- It can be done on a directly on a flame provided if you are an adult & can work in kitchen( & there is no smoke detector) The outer layer need to be put on the flame so we can peel it as shown in the video .

2) In a wok or a deep pan + Oil , once hot add Cumin Seeds - let it crackle.

3) Then add Cinnamon and cardamom, Asafetida - saute for 1-2 sec .

4) Add Onion- Ginger -Garlic Chopped- Add salt ( Salt will help to cook faster) & add turmeric powder and cook for 5-10 mins.

5) Add tomatoes and cook for more 5 mins, until tomatoes turns soft.

6) Add garam Masala and Red chilly powder & can add little coriander for extra flavor.

7) Discard the Egg plant outer layer and scoop out the pulp and use it in the 6 th step.

8) Give it a mix and cook for 2-5 mins -

Your Baingan Bharta / Egg Plant Curry is ready .
