KADHI PAKORA RECIPE


Kadhi Chawal .. is very famous in many part of India, the famous ones are from Rajasthan, Gujarat, Maharashtra & Punjab....and each of them have a unique flavor.

So after trying all those different kadhi ,have tried to come up with combination of all good stuff into one ie by adding pakoras & giving it a little sweet - spicy combo.

If you want to make a faster version of the same , you can exclude adding Pakora totally and can skip Onions as well...other than that the cooking process remains the same.

Whereas someday if you can spare little extra time - please do follow my recipe as it is.

Good to make when the weather is hot... as it is gives a cooling effect to the tummy.

Ingredients for the PAKORAS are as follow :-

Combine everything well -Batter should be 1) should not be watery.

2) Should not be Super thick.

3) Should be flowing consistency.

Scoop with a Teaspoon and Take Oil in a kadai for deep frying ( around 1 cup ) and deep frying on medium flame, until the pakoras are cooked inside-out. And set it aside on a paper towel/ plate.

Rest of the Ingredients for the kadhi are as below :-

  1. Yogurt / Curd 2 Cups

  2. Water 2 Cups

  3. Onion 1 Small Sliced

  4. Salt 1 Tsp

  5. Sugar 1/2 tsp

  6. Gram Flour / Besan 1/2 Cup

  7. Ghee 2 Tbsp

  8. Mustard Seeds 1/2 Tsp

  9. Fenugreek Seeds / MethiDana 1/2 Tsp

  10. Bay Leaf 1

  11. Asafetida / Hing 1 Tsp

  12. Curry Leaves 5-6

  13. Turmeric powder 1/2 Tsp

  14. Red Chilly Powder 1/2 Tsp

  15. Cumin Seeds 1/2 Tsp

  16. Garlic 1 -2 ( As per taste / Optional )

* You will need wired Whisk.

Method :-

1) In a pot add 2 Cups of Yogurt (Curd) Do Not ON the Flame .

Now add 2 cups of Water & add 2-3 Tbsp of Besan or Gram Flour . Now with a Wired Whisk or a hand blender whisk until no lumps.

NOTE **( You can adjust the quantity of besan and flour as per required.***

2) Once there are no lump of the besan Or gram flour, put ON the flame on LOW FLAME and add Turmeric powder & keep whisking constantly until there it boils once .

NOTE ***If you do not whisk or put the flame on high .....The Yogurt will curdled .

3) In another pan add 2 Tbsp of Ghee. Once hot add Mustard Seeds (1/2 Tsp ) ,once it crackles . Add Fenugreek Seeds(1/2 Tsp), 1/2 Tsp of Cumin Seeds, 1 Bay Leaf , 1 Tsp of Asafetida .....saute for 2 mins .

4) Add Sliced Onion , Chopped Garlic -1-2 (Chopped) , Few Curry Leaves, Red Chilly Powder (1/2 Tsp) as per taste......saute for 5 mins.

5) Pour in the Kadhi (yogurt and besan mixture) , Salt - 1 Tsp & 1/2 Tsp of sugar (Optional) .

6) Add back the Pakoras & let it cook for 5 mins more .

Have it with pipping hot Cooked rice , pappad /papadum & any Pickle of your choice.
