Green Onion Sabzi /kandyachi paat bhaji/ Hare pyaaz ki sabzi

Green Onion also popularly known as spring onions, is mainly used in many Chinese recipes to give that unique flavor. Whereas green onions and regular onions are widely used and grown in Maharashtra mostly between the month of may- june.

The tender leaves and bulbs of green onion hardly takes any time to get cooked, as you might have seen the video above, it took me no time to make this recipe.

There are hundred other ways and recipes to make, i choose to start with a mahar-ashtrian style which includes roasted peanut powder, to give a texture ...a hardiness along with the soft greens of spring onions.

Let's begin with the recipe :-

Ingredients :-

Green Onions -2 Bunch

Roasted Peanut powder - 2 Tbsp ( recipe for this will be up soon )

Garam Masala Or

kanda lasun masala Or

Goda Masala - 1/2 to 1 tsp (as per taste)

Salt - 1/2 Tsp

Turmeric Powder - 1/2 Tsp

Red Chilli Powder -1/2 Tsp

Onion - 1 small chopped

Oil - 2 Tbsp

Cumin Seeds -1/2 tsp

Hing / Asafetida -1/2 Tsp

Ginger / Garlic paste -1/2 tsp - 1 tsp

Method :-

1) Wash, Pat dry and chop the onion as shown below .

2) The bottom part or the roots can be re planted in the soil and you can enjoy having green onion leaves in your own little space. All you have to do it chop( without uprooting the roots) the leaves when they become long as store brought.

3) In a pan ,add some oil (2 Tbsp), Once its hot enough add Cumin seeds( 1/2 Tsp) , Hing / Asafetida - 1/2 Tsp - let cumin seeds crackle.

4) Add 1 small regular onion chopped ,Ginger- Garlic paste (1 Tsp) and saute it on low- medium flame for 2- 5 mins .

5) After 5 mins add in the chopped green onion - along with all the masala as below

1/2 tsp - salt

1/2 tsp -Garam masala powder /kanda lasun masala / Goda Masala

1/2 tsp-Turmeric powder

1/2 tsp- Red Chilli powder

and cover and cook for around 5 mins on medium flame -.

6) After 5 mins uncover and add jaggery 1 small piece. ( You can add sugar instead) and cook it until the jaggery dissolves.

7) Then add roasted peanut powder - 1-2 Tsp and combine all well - stir for 2 mins .

And you can put off the flame - Your Sabzi is ready !!!

Enjoy the sabzi with jowari roti or bhakri or any paratha or roti of your choice . You can also serve it with rice, as an extra sabzi ,enjoy the goodness.
