Baingan Bharta /Egg Plant Curry
Below is the video that i had created on my phone & was still not sure of A B C 's of video making..hahaha Awkward . After so many videos and months on working on my channel, i can proudly say i am surely doing much better than i started with ;) LOL ..excuse me for the video.
Baingan bharta , one of those dish other than panner butter masala that you can easily find in every Indian restaurant, whether you live in India or abroad.
Eggplant, its an easy find in any of your local grocery store. Pick one which is nice and firm and without any bumps. If you have any high end Oven or outdoor Barbecue or if you have an cook top with flame, you can choose your way of roasting the eggplant.
( DISCLAIMER :- 1) There can be smoke while roasting , so if you have smoke detector near by or any where in the house, please do not do Indian way directly roasting on flame.... use Owen as shown in video and pictures below. 2) Ask grown up for help, can burn yourself while roasting.)
Egg plant curry or sabzi can be enjoyed with any kind of indian bread /rice or even regular bread, Naan or tortillas.
Ingredients :-
Egg Plant 1
Salt 1 Tsp ( As per taste)
Onion 1 Medium Size chopped
Tomato 1 Chopped.
Turmeric Powder 1/2 Tsp
Red Chilli Powder 1/2 Tsp
Garam Masala powder 1 tsp
Oil 2 Tbsp
Coriander Leaves Handful chopped
Cinnamon Stick 1 -2
Green Cardamom 2
Cumin Seeds 1 Tsp
Ginger-Garlic Paste 1 Tsp (As per taste)
Asafetida 1/2 Tsp
*** For Roasting :- 1) Directly on Flame.
2) Use Oven or Barbecue/ Grill.
Method :-
1) If there are no smoke detector in your house and have cook top with flame (fire). Roast it until the outer skin roast turns black....keep rotating until all sides ie the outer layer turns black enough.
OR
1) Use a oven tray or aluminum tray, and place the egg plant in it and slit or poke some cuts in the Egg plant with a knife and sprinkle pinch of salt and drizzle 1/2 tsp of oil and Bake in the oven at 400 - 420 Degree F for 30 mins and then BROIL for 10 -15 mins .
3) You can see below how the egg plant is turned black from outside, where as perfectly cooked from inside. By doing this method the skin separates from the pulp easily and the pulp can used to cook and skin can be discarded.
4) In a pan , Take 2 Tbsp of oil , add couple of cinnamon sticks, 2 green cardamom, Asafetida and cumin seeds ..let it crackle for 2 mins .
And then add Chopped onion and ginger-garlic paste and 1 tsp of salt , Turmeric powder and let it cook for 5 mins.
5) Then add tomato chopped and let it cook another 5 mins .
6) Add Red Chilly Powder , Garam Masala Powder and Coriander leaves for taste ( optional) and sauté for 2-5 mins on low flame.
7) Now add the cooked Egg Plant and cover for 5 mins . And your egg plant curry .." Baingan bharta "is ready
