Dahi Vade

Dahi Vada / Bade ,dahi means yogurt and Vade means dumpling/ Fritters . In short to sum it all up .. dumpling drenched in yogurt sauce. Indian Food is known to be the BEST Cuisine in the world !There are diehard fans of Indian food all over to the world today, some who fly down to India just to taste some authentic Indian food.

There are so many types of snack items that one can find in India & to narrow it down and select one is a difficult task for anyone.

Dahi Vade is a good recipe for those extra dishes for any party as an extra appetizer & the most important part is it takes less effort to prepare.

FOOD-OO-HOLICS :- I have teamed up with FOH to make videos for the group. This time it was a contest for holi and theme was "Rangbarse" and i get to pick one of my favorite recipe out of all.

So here is a recipe by Mrs. Sangita Srivastava. "Dahi Bade "

Her presentation of the dish is so pretty & eye catching <3. She is one of the best cook & a lovely person i have come across.

Ingredients :- can make around 20-25 vada

Urad Dal 2 Cups

Moong Dal 1 Cup

Salt 1 Tsp

Hing 1/2 Tsp

Oil 1 - 2 cup ( as much needed)

Sweet Tamarind Chutney * recipe will be up soon or store brought.

Coriander Mint Chutney (Recipe video below)

Pomegranate Seeds (Optional) As much needed.

Coriander / Cilantro 1/2 - 1 cup Chopped (As much Needed) .

Shev 1-2 Tbsp ( As much needed)

Method :-

1) Soak separately Urad Dal and Moong Dal for 4 hrs. You can even reduce the quantity shown in the video. Take (1/2 cup Urad dal & 1/3 cup of Moong dal = to make for 2-3 person)

2) And GRIND both separately without adding any water. so you can see below i removed all the water at 1st so i don't accidentally grind with water.

3) Remove it in a large bowl and add 1 Tsp of Salt and 1/2 tsp of Hing/ Asafoetida.

4) And mix well and beat it together with a hand mixer or a whisk until nice and fluffy. The more you whisk the more lighter the vadas turned to be. The more tastier.

5) In a deep pan , Take enough oil and fry only when its gets into the right temperature of frying. You can drop 1 small ball of batter to check it. You can even shallow fry it or even bake the vada.

* For frying, try not to make very big or thick vada, it might not taste that good. I have used a medium size ice cream scoop for frying all in the same size or you can make traditional way of medu wada by poking a hole in center so it cook evenly.

make sure you fry only on medium flame and not at all on High flame. As it might cook faster but will not cook from inside.

6) Once all the vada is fried , place all of them in a large bowl with salted water ( 1 tsp of salt) & let it sit there for 2-5 mins.

7) How to make yogurt sauce :-

It should enough so that all vada should be completely emerged/ soaked in it.

For this in a bowl Take 2-4 cups of Yogurt / Dahi .

you can add little bit of water if the yogurt is too thick .

Add Roasted Cumin seeds powder - 1/2 to 1 tsp

Add Red Chili Powder -1/2 to 1 Tsp

Add Salt -1/2 to 1 Tsp.

8) And remove from the salted water 1 vada/ dumpling at a time by pressing them between your palm and now emerging them in this yogurt sauce for 5 -10 mins . You can let it be your final plating as this or can scoop from here and serving it in a serving bowl and garnish in that.

9) Once ready to serve , garnish it with Sweet Tamarind chutney ( video will be up soon ) , Coriander -Mint Chutney( video link is on top of this page), Chopped Coriander leaves , Some pomegranate (Optional) and sprinkle some roasted cumin powder and red chili powder (optional) .

10 ) Optional :-

a) You can make vada as shown here ,

b) by Soaking plain bread and squeezing out all water and rest of the procedure (from 7-9 )

c) Make dumpling by making vada from boiled potato and follow rest of the procedure.
