Gavran Mutton

If you eat mutton ,you should definitely try one of the best recipe of mutton ever.
The color & the aroma of the curry is to die for.
If you don't eat mutton, you can surely prepare the same way with chicken.
The more i praise about it, its still not enough. Do try to make it on a weekend or whenever you get an extra time than usual & let us know how it turned out to be. You definitely need a bit of extra patience to make it to the perfection.
Giving an heads up , its a lengthy recipe. The mutton will literally melt in your mouth if you are a good cook & prepare the same way.

The whole recipe consists of 3 steps of preparing 3 different masala.
Ingredients for the 1st Marination :- >
Method :-
In a large bowl , take the required amount of Mutton - 2Kg ( Cleaned , washed and drained ) ,
Add Onion thinly sliced ,
Add Red Chilly Powder - ( you can increases the amount of heat as required ) ,
Add Turmeric Powder ,
Add Coriander Powder,
Add Cumin Powder,
Add Garam Masala Powder / Goda Masala / Kala Masala,
Add Garlic chopped,
Add Ginger Pieces,
Add Coriander Leaves,
And 1 cup of cooking Oil and keep it covered for 20 mins .
Ingredients for the 2nd masala :-
Method :-
1 ) In a skillet , dry roast Sesame seeds until dark brown & remove it in a bowl OR use BAJRA flour and dry roast and keep aside.
2) OPTIONAL STEP :->
Then in the same skillet, adding 1 Tsp little oil , roast coconut pieces until the color turns exactly as shown ... makes sure you don't burn it. And keep it separate.
3 ) Also dry roast " ROASTED Chick peas / Dalva /Phutane " for 5 mins on high flame.
4) In the same skillet , add 2 Tbsp and roast the whole Garam masala for 2 mins .
5 ) Then in the same pan add 1 tsp o and add grated Dry coconut, sauté for 10 mins and then add the sliced onion and keep roasting until it turns light and dark in color, adding additional 1 tsp of ghee
6 ) Final step - in a grinder / Mixer - add all the roasted ingredients , adding little WATER grind to a smooth soft paste.
* Roasted Coconut -Onion Slice.
* Roasted Chick Peas .
*Roasted Sesame Seeds
*Roasted Coconut Pieces ( Optional )
& The roasted whole garam masala .
3 ) Ingredients for 3 rd Masala
* In a mixer or MORTAR - PESTLE - smash Ginger - Garlic into coarse paste.
* Then smash coriander Leaves into a coarse paste and keep it ready .
Lets begin with the MAIN cooking .
1) Pressure cook marinated mutton for 10-12 mins adding 1/2 cup of water.
Once cooked separate stalk from the pieces.
2) In a large pan , heat oil add Bay leaf and sauté for 1 min. And then add the 3rd masala ie the coriander /Ginger/ Garlic masala and sauté for 2 mins ONLY. we do not want to change the color at all. Add the brown masala paste and sauté for 2- 5 mins , and then add half of the stalk to prevent it from drying or burning.
Add 1 Tbsp of SALT - ( as per taste)
Then add Mutton pieces and rest of the stalk and saute for 2 mins or more .
Adjust the consistency by adding water as much needed.
Drizzle 2 Tbsp of GHEE and put off the flame. can add pepper powder to adjust the heat.
