Ginger Mutton Sukka / Dry mutton curry
Presenting a super tempting recipe , one of the brainchild recipe of my dad. He is self taught and does all kind of experiment and re creates any boring dish into super yummy and delicious recipe. He lost his parents at very young age, so for me and sister we have seen him helping my mom with all kind of household work along with his regular work ,usually which men are reluctant to do.
(Though most or all of the restaurants, usually it is mens who are chefs , yet at home you will find women who play this role. )
Weekends were always special , i use love being his helper with all the things he needed , as per his instruction. This is the reason why i love and drawn towards cooking so much .

Still any chance he gets he cooks up a storm , though cleaning up the after math is what female best at ;)
Any Non.Veg recipes tastes good when it is spicy . So don't pull back those onion, black peppers and herbs which go along . The more you add in the more the flavor.
Ingredients :-
Mutton 1/2 kg / 1 Pound
Ginger 2 -4 Large chunk ( As per your taste)
Garlic 10-11 (As per your taste )
Green chillies 5-7 ( As per your taste)
Tomatoes 3
Black Pepper 1 Tbsp (As per your taste)
Ghee/ Coconut Oil 2 Tbsp or more
Mustard Seeds 1 Tsp
Fennel seeds 1 Tsp
Cumin Seeds 1 Tsp
Salt 1 Tbsp ( As per your taste)
water 1/2 Cup
Coriander / Cilantro Leaves 1 Cup
Curry Leaves few
Turmeric Powder 1 Tsp
Onion 2 Large Onion thinly Sliced
Garam Masala as below :-
Green Cardamom / Cinnamon Stick/ Star Anize/ Cloves / Bay Leaf
Method :-
Before cooking any meat =ALWAYS follow the 1st step as below.
1) Apply Salt -1 tsp on mutton and let it sit for 10-15 mins and then wash at-least 3-4 times and drain all the water .
2) In a blender add all of the Ginger /Garlic, Tomato, Coriander, Green Chillies & Black Pepper, Garam Masala and Grind them into smooth paste !
3) For cooking i have used CAST IRON POT & the meat cooks easily in it , without transferring into pressure cooker .
Whereas if you are using PRESSURE COOKER - 1) Pour 1/2 cup of water .
2) And let cook on medium flame and let it whistle 1 (once) .
3) And then low down the heat / Flame and cook on LOW flame for 40 -45 mins , until the meat is done .
In a pot - Add 2 Tbsp of Coconut Oil or Ghee - 2 Tbsp
Curry Leaves
Cumin seeds
Fennel seeds and let it crackle.
4) Then add Mustard Seeds and let it crackle.
5) Add 2 Onion( the more the tastier ) and cover and cook for 5 mins
6) And add Washed and drained mutton pieces .
Cover and cook on low for 40 mins or until done . Keep stirring every 15 mins .
Uncover and combine.
7) Then add Grinded Paste and 1/2 Cup of Water .
8) ADD 1 tsp of Turmeric powder - 1 tsp and SALT - 1 tsp as per taste .Mx together and cover and cook for 15 mins or until the meat is completely done.
9) Uncover and cook until the Gravy is dry and thick !
You will notice the color of the curry getting darker and darker .
Serve this amazing curry with your favorite BREAD/ NAN / BHAKRI/ OR just like that !!!
