Lunch -Dinner Thali Ideas


Easy to put together meals ideas.

The above image shows :- 1) Palak ( Spinach) Moong Dal.

2) Hot and spicy Swad Pickle / Achar

3) Rice

3) Roti

4) Methi (Fenugreek Leaves) sabzi/Bhaji

5) Cucumber pieces

1) Palak Moong Dal .

Serves - 5-6

Ingredients :-

Yellow Moong Dal - 1/2 - 1 Cup

Chopped fresh Spinach - 2 Cups.

( Frozen Spinach can be used)

Cooking Oil - 2 Tbsp

Mustard Seeds - 1 Tsp

Asafoetida(Hing) - 1/2 -1 Tsp

Cumin Seeds -1 Tsp

Chopped Onion -1 Medium Size

Ginger Paste -1 Tsp

Garlic Paste -1 Tsp

Tomato - 1 Sliced Water -2 Cups

Turmeric Powder -1 Tsp

Red Chilli Powder - 1 Tsp

Salt - 1 Tsp ( As per your taste)

Method :-

1) Wash and soak Yellow Moong dal- 1/2 Cup for 10 mins.

Wash and chop Spinach - around 2 CUPs

2) In a pressure cooker add 2 Tbsp cooking oil, once hot add 1 Tsp of Mustard seeds.

Let it crackle. Then add 1/2- 1 tsp of Asafoetida( Hing).

3) Add Cumin Seeds( Jeera) - 1 Tsp .

3) Add 1 Medium size Onion + 1 Tsp of Ginger paste + 1 Tsp of Garlic Paste- Combine all well together and saute for 2 mins on medium to high flame.

4) Then add sliced tomato ( SLICE =Cut 1 tomato into 4 equal parts). Mix all together.

5) Strain the Moong dal into a bowl & save the water .

6) Then add only the MOONG dal into the pressure cooker. Add 1 Tsp of salt ( as per your taste). Add 1 Tsp of Turmeric Powder and 1 Tsp of Red Chilli powder .And combine all well together & Keep stirring for 2 mins, until the moong dal is little roasted.

7) Add the strained water into it , along with 1extra cup of water .

8) Cover with its lid and pressure cook for 2-3 Whistle. Put off the flame.

Wait until the steam evaporates by itself . Uncover and Put on the flame again.

9) Add the chopped Spinach/ Palak and mix well and add extra water ( 1 cup ) and do the taste test for salt and let it boil for 5 mins.

And your palak moong dal is READY ! It takes no time to cook moong dal .

2) Store Brought - #SWAD Extra spicy Mango pickle.

3) RICE .

Cooked in INSTANT POT

Rice 1 Cup

Salt 1/2 Tsp

water 2 Cups

Method :-

1) wash rice 3 times.

2) Add in the instant pot , Rice, Salt and water .

3) Set it on RICE OPTION - 12 mins on low .

4) ROTI

( I use platic bowl, so the dough does'nt take too much time to knead and it does'nt stick to sides) .

DOUGH :- In a large bowl add 1-2 cups of Wheat Flour ( as needed) and add salt - 1/2 - 1 tsp and add water little by little around 1/2 cup and knead all together in soft dough .

Smear cooking oil and knead one last time.

ROTI :-Scoop little atta in size of a lemon and dust some dry flour and roll into roti .

With practise you will get better with the shape and size of roti. You can always make use of tortilla maker in case, which is easily available on #amazon.

Take a FLAT TAWA ( utensil) Roast both the sides , remove and smear very little ghee or oil .

5) Methi sabzi / Fenugreek Bhajji

Methi Leaves 1 Bunch

Oil 1 Tbsp

Onion 1 Medium size Chopped.

Cumin Seeds 1 Tsp

Salt 1 Tsp

(Swad ) Garlic Chuttney(Dry) 1 Tsp

Roasted Peanut Powder 1-2 Tsp

Roasted Sesame Seeds 1 Tsp ( Garnish) Optional.

Method :-

1) Separate/ Break Methi leaves keeping a inch of stem & repeat for the entire methi bunch.

Below is the image you can refer as how much stem to keep.

How to clean the methi :-

Take a large bowl and put in the methi and fill in the bowl with water and wash scrubbing gently to remove all the dirt .

Now scoop all the leaves and place them in another bowl. You will notice all the soil and dirt settled below the water .

Discard the water, wash the bowl and add in the water and add in fresh water and REPEAT 3 TIMES.

2) Drain all the water ,use strainer if necessary.

3) You can chop the leaves or just leave it as it is.

4) In a pan add 1 Tbsp of oil . Once hot enough add 1 tsp of Cumin Seeds and let it crackle.

Then add 1 medium chopped Onion . And saute all together.

5) Then add 1 Tsp of salt , 1 Tsp of Garlic dry Chuttney ( You can use Maharastrian GODA mosala) & then add the methi leaves .

6) Combine all together and cover and cook on LOW HEAT for 5 mins .

7) Uncover after 5 mins , Add 1 tsp of Peanut powder and cook uncovered for 2 -5 mins stirring continuesly.

8) When done, garnish with roasted Sesame Seeds

6) SALADS AS PER YOUR CHOICE ;- sliced Cucumer/Raddish / Carrot or Beet.
