Lunch- Dinner Thali Ideas
Easy to put together Lunch- Dinner Ideas:-

RICE
Cooked in INSTANT POT
Ingredients Needed :-
Rice 1 Cup
Salt 1/2 Tsp
water 2 Cups
Method :-
1) Wash rice 3 times.
2) Add in the instant pot/ Rice Cooker , Rice, Salt and water .
3) Set it on RICE OPTION - 12 mins on low .
ROTI
( I use platic bowl, so the dough does'nt take too much time to knead and it does'nt stick to sides) .
DOUGH :- In a large bowl add 1-2 cups of Wheat Flour ( as needed) and addsalt - 1/2 - 1 tsp and add waterlittle by little around 1/2 cup and knead all together in soft dough .
Smearcooking oil and knead one last time.
ROTI :-Scoop little atta in size of a lemon and dust some dry flour and roll into roti .
With practise you will get better with the shape and size of roti. You can always make use of tortilla maker in case, which is easily available on #amazon.
Take a FLAT TAWA ( utensil) Roast both the sides , remove and smear very little ghee or oil .
CHOLE
Ingredients
Onion 2 Medium size ( the more onion tastier )
Chole / Chick Peas 1 Cup ( Or as needed )
Tomato 2 Large Chopped
Ginger Paste /Chopped 1 Tsp
Garlic Paste / Chopped 1 Tsp
Salt 1 tsp ( as per taste)
Turmeric Powder 1 Tsp
Jeera / Cumin Seeds 1 Tsp
Oil 2 Tbsp
Red Chilli Powder 1/2 tsp -1 Tsp ( as per taste)
Garam Masala Powder 1 Tsp
Chole Masala ( MDH Comp) 1 Tsp
Coriander / Cilantro Leaves 1/2 Cup Chopped
Kasturi Methi 2 Tbsp Crushed
Asafoetida / Hing 1 Tsp
Amul Butter ( Optional ) 1 small slice cube
Whole Masala:- 1) Cinnamon Stick - 1 inch - 1
2) Bay Leaf - 2 Small /1 Big
3) Green Cardamom - 2-3 pods
4 ) Cloves - 2-3
Method:-
1) Soak Chickpea Overnight - 1cup / min 8 Hrs
2) In the morning:- wash 3 times. Fill the cooker insert soaking the chickpea completely and pressure
cook until the 5-7 whistle, adding 1 green cardamom, 1/2 tsp turmeric powder, 1 clove.
The cooking time for pressure cookers varies.
3) Meanwhile in a Vessel once hot:- add Oil, add all the whole masala, cumin seeds - let it crackle!
4) Add Asafoetida, chopped Onion, Garlic and ginger paste.- SAUTE for 5 mins
( OPTIONAL IF YOU LIKE IT TO MORE SPICER adding 1-2 GREEN CHILLY PASTE- although chole masala & garam masala have enough spice )
5) Then add Turmeric Powder & salt - saute 2 more mins.
6) Add Chopped Tomato - Saute on low- medium heat, until oil separates.
7) Then take Boiled Chickpeas, crush a few of the chickpeas by a spoon or by hand and pour all the boiled chickpea in the above step ( 6th ) and combine all well together.
8) Add Red chili Powder, Garam Masala Powder & add enough water for the kind of gravy you prefer- 2 cups.
9) Let it come to boil & add in Chopped Coriander Leaves and Kasturi Methi leaves - Boil for 5 -10 mins on low heat.
Optional:- Can add 1 small slice of butter for added flavor!
SHIMLA MIRCH SABZI
INGREDIENTS:-
Green Pepper / Shimla Mirch 1 -2 Chopped
Oil 2 Tbsp
Cumin seeds 1 Tsp
Onion Chopped 2 Small
Garlic paste 1 Tsp
Ginger Paste 1 Tsp
Goda Masala(Maharashtrian )
OrGaram Masala Powder /
Red Chilli Powder 1 Tsp Salt 1/2 - 1 tsp ( as per taste)
Turmeric Powder 1 Tsp (Teaspoon)
Roasted Peanut Powder 1 TBSP ( Tablespoon )
Method:-
1) Chop the green pepper into inch cube or smaller pieces, as you prefer.
2) In a pan, add oil - once hot add cumin seeds, onion, ginger-garlic paste - saute for 2-5 mins on low flame.
3) Add salt, Goda masala OR Red Chilli Powder OR Garam Masala Powder ( whatever you got in your pantry).
Then add Turmeric powder and chopped Shimla Mirch and combine everything well.
And, cover and cook on low- medium flame until the Shimla( green pepper) softens - 5 mins
Uncover after 5 mins and cook without covering until oil separates and then add powdered peanut powder.
Put off the flame and your delicious sabzi ready in no time!
EGG BHURJI
Eggs 2-3
Onion 1 Small chopped
Chopped Ginger 1 Inch
Chopped Green Chillies 2-3 ( As per your taste)
Chopped Tomato 1 Large
Mustard Seeds 1 Tsp
Curry Leaves ( Few) 5-6
Turmeric powder 1 Tsp
Salt 1 Tsp
Oil 2 Tbsp
Method :-
1) Break and beat and whisk the egg in a bowl
2) In a Kadai, add oil, Once hot add Mustard Seeds - Let it crackle.
Then add together Curry leaves, Onion chopped, Ginger Chopped, Green Chillies Chopped and mix them all together and cook for 2 mins.
3) Then add Chopped Tomato & Turmeric Powder (Optional) - cook for 2mins on low flame.
4) Then add the beaten egg and add cilantro and give a quick mix.
5) Cover and cook on low flame for 2 mins.
6) uncover and cook again for 2-3 mins until the eggs are well done.
